Aunt Beaut’s Sugar Cookies

My Aunt Beaut lived in McCracken, Kansas and was a school teacher there.  McCracken’s claim to fame is that part of Paper Moon was filmed there. Aunt Beaut was a character and a fantastic baker and cook.  She was almost 6 feet tall, a giant among much shorter folks, with red hair and a personality to match. 

I have a few of her recipes that will appear here sometime as they are all excellent. Since it is almost Christmas that is why all of the Sugar Cookies and Christmas baking things. I love to bake as well and probably got part of that love from Aunt Beaut. 

Most of the recipes on this site are fairly easy and for a reason.  My desire is to see more people start to bake at home.  It is very easy, a little dangerous, and is a confidence booster too.

My Aunt Beaut was the originator of this sweet little sugar cookie recipe.  She was an excellent baker and cook. These are easy to make and a very simple, very good cookie.

Ingredients

1 ½ Cups Powdered Sugar

1 Cup Margarine

1 Egg

1 teaspoon Vanilla Extract

¼ teaspoon Salt

½ teaspoon Almond Extract

2 ½ Cups Flour

1 teaspoon Baking Soda

1 teaspoon Cream of Tartar

Directions

  1. Cream sugar and margarine until smooth. Add egg and vanilla extract and mix well

  2. Stir flour, salt, baking soda and cream of tartar. Mix into the first mixture slowly.

  3. Chill for 2 to 3 hours or overnight. Roll into very small dough balls, roll in sugar and press the cookies down with the bottom of a glass or cookie press and place on a parchment covered cookie sheet.  Bake at 375 degrees F for 8 minutes. 

  4. Cool cookies on wire racks.
