LAZY DAY STEW
This was a recipe that my aunt Joanne shared with my Mom. Joanne was an excellent cook and baker and as I spent a lot of time with her, I picked up some of my baking and cooking skills from her. My Mom and Joanne were best friends and both excellent bakers and cooks.
Stew is one of those things that really, for me, is a winter dish. I do not serve this in the scorching summer months. This is so comforting and warm on a winter’s day. It is also very hardy.
This stew is usually done in the oven in a 13X9 pan, but I am trying it in a crock pot. I don’t see any reason why it would not work. I use the crock pot because it is just so easy and it means I don’t have to have my oven on for two hours.
This is a stew that my aunt Joanne made and it is really delicious. It is one of my favorite meals in the winter months. I serve it over slices of bread, or biscuits as the mood strikes me. It is a warm and inviting stew.
INGREDIENTS
2 Lbs. Stew Meat
6 Potatoes
1 Cup Celery, cut into bite-sized pieces
1 Cup Onions, chopped
1 Cup Carrots, cut into bite-sized pieces
1 Cup Water
1 teaspoon Sugar
1 teaspoon Salt
½ teaspoon Pepper
2 teaspoons Minute Tapioca
DIRECTIONS
In a 9X13 pan, arrange the stew meat in a layer. Layer the cut veggies over the meat.
Mix the tomato sauce, salt, pepper, water, and tapioca. Pour over the meat and veggies.
Cover the pan tightly with aluminum foil. Bake for at least 2 hours at 325 degrees F.
Serve over bread or biscuits.
