Microwave Peanut Brittle

I have been making Peanut Brittle for decades. I have perfected the recipe for people who don’t want a slab of peanut brittle but a melt in our mouth experience. Once my peanut brittle is out and on the pan cooling, I wait about 5 minutes and then start pulling the peanut brittle out so it is thin and easier to eat. 

I started stretching the hot brittle because my teeth were not good and so I needed a peanut brittle that would not break teeth.  This stretched version has been a huge hit with my family and friends.

Now that I can make it in the microwave, it takes about 15 minutes a batch, I made three batches today for trays that I am making for friends for Christmas. All in an hour this morning.  Crazy. It used to take me an hour a batch. Now I can do multiple batches in an hour.  

If you are buying peanut brittle in the stores, stop, try this Microwave Peanut Brittle recipe and never go back to the boxed stuff at the store.  It is so easy to make.

Microwave Peanut Brittle is so easy to make. It is 15 minutes brittle. It used to require a candy thermometer and time, now it does not and the brittle is exactly the same quality as the stove top version that takes time.

Ingredients

1 Cup Sugar

½ Cup Light Corn Syrup

1 Cup Raw Spanish Peanuts

1 Tablespoon Butter

1 teaspoon Vanilla Extract

1 teaspoon Baking Soda

½ teaspoon Salt

Directions

  1. Prepare a cookie sheet with a silicon baking mat and spray with cooking spray. Or you can just spray the cookie sheet liberally with cooking spray. It is easier to get the brittle off of the silicon baking mat though. 

  2. Mix sugar and corn syrup together in a 2 qt glass bowl. Microwave on high for 4 minutes.

  3. Add peanuts, mix well and microwave on high for 3 minutes

  4. Add butter and vanilla extract and mix well, microwave for 2 to 2.5 minutes.

  5. Add baking soda and salt and mix well.  Pour onto the prepared pan and let cool.
