Rice Cereal Cookies
I know, a weird name for cookies, but these cookies are a star. They are buttery and chewy, and just a great cookie. My Mom got this recipe years ago from one of our teachers, I think. I am not sure where it came from, I am just happy it came our way. I make these cookies often. If you want to make a delicious cookie, try these. They will not disappoint.
Ingredients
1 Cup Unsalted Butter
1 Cup Light Brown Sugar
1 Cup Granulated Sugar
2 Eggs
2 teaspoons Vanilla Extract
1 1⁄2 Cups Flour
1⁄4 teaspoon Salt
1 teaspoon Baking Powder
1 teaspoon Baking Soda
2 Cups Quick Oats
1 Cup Coconut, shredded, sweetened
2 1⁄2 Cups Rice Crispies
Directions
Preheat the oven to 350 degrees F.
Cream together butter and sugars until fluffy. Add eggs one at a time, mixing after each. Blend in vanilla extract.
Sift flour, salt, baking powder, and baking soda. Add to wet mixture.
Stir in oats, coconut and rice cereal.
Drop by teaspoons full two inches apart onto parchment lined cookie sheets.
Bake for 10 minutes or until done.
