Chocolate Crinkle Cookies
Ah, Chocolate Crinkles cookies, how I love you so. These cookies are really good, and kind of a different cookie. Most of the chocolate cookies are not like these. These are kind of like little cakes, only more dense.
My Mom used to make these just any time. But I found as I became an adult that a lot of people just make these for Christmas. What a waste of a good cookie. Once a year? No way! I make these, like my Mom used to, any time I feel like them.
So Crinkle for Christmas or Crinkle for any time. Whatever you like will work.
Chocolate Crinkles are kind of like little cakes. They are something my Mom used to make often. Some people just make them at Christmas. Not my Mom though, we had these all year round.
Ingredients
½ Cup Cocoa Powder, unsweetened
1 Cup Granulated Sugar
¼ Cup Vegetable Oil
2 Large Eggs
1 teaspoon Vanilla Extract
1 Cup Flour
1 teaspoon Baking Powder
¼ teaspoon Salt
½ Cup Powdered Sugar (for rolling cookies in before baking)
Directions
In a mixing bowl, combine sugar, cocoa powder, oil, vanilla and eggs. Whisk until the mixture is smooth.
In a separate bowl, combine flour, baking powder and salt.
Add the flour mixture to the cocoa mixture and combine.
Cover the dough with plastic wrap and refrigerate for at least 3 hours and up to overnight.
Preheat the oven to 350 F. Scoop the dough with a cookie scoop, then roll the dough in the powdered sugar.
Place the cookies on a baking sheet, being sure to leave them about 2-inches apart. Bake for 10 to 12 minutes. Allow cookies to cool slightly on the pans and then remove them with a metal spatula to a wire rack to cool.
