Microwave Pecan Brittle

I have been making Pecan Brittle for about 10 years.  When I first started I made it on the stove top. This stuff had to be cooked on the stove top at such a high temperature that I burned up about a dozen expensive candy thermometers.

Then I found this Microwave Pecan Brittle. It changed everything.  Now instead of taking 90 minutes to make it takes about 15 minutes.  I have made three batches of this Pecan Brittle tonight.  I make trays for my pastor, and my camp hosts and the lady who makes my tamales every Christmas to take back to Kansas. 

This brittle is nothing like Peanut Brittle.  It is salty and buttery and so different.  It is one of my favorite things at Christmas.

This is a buttery, salty amazing brittle.  I just started making it about 10 years ago and this has become one of the most requested things I make for Christmas.

Ingredients

Cooking Spray

1 Cup White Sugar

½ Cup Light Corn Syrup

1 ¼ Cups Pecan Halves

1 Tablespoon Butter

1 teaspoon Vanilla Extract

1 teaspoon Baking Soda

1 teaspoon Salt

Directions

  1. Spray your glass bowl with cooking spray liberally. Line cookie sheets with either tin foil sprayed with cooking spray or silpat baking mats sprayed with cooking spray. Set aside.

  2. Combine the sugar and light corn syrup in the glass bowl.  Microwave on high for 3 to 4 minutes, depending on your microwave.

  3. Add pecans to this mixture and microwave for 3 to 3.5 minutes. (it should be a light amber color when it finishes this cycle.

  4. Remove from the microwave and add butter and vanilla.  Stir until combined and microwave for 1 minute. 

  5. Remove from the microwave and stir in the baking soda and salt.  Pour onto the prepared cookie sheet.  Once cooled to the point where the edges are just starting to form, put on heat gloves if you have them and stretch this brittle to thin it a bit. Let cool completely and store in an airtight container.

Notes

This brittle can be made several weeks in advance.
